As promised via Insta-Story poll, I decided to do a blog post on these yummy potatoes I made last week from The Pioneer Woman. If you end up making this, please DM me with your picture and handle and I’ll be sure to share it on my story! Without further ado, here we go.
What you’ll need:
Potatoes (I made two since it was just for me but you can make around 12 with a full pot of water)
Water
Extra Vitrgin Olive Oil
Pot
Cookie Sheet/Tray
Toaster Oven/Oven & Stove
Foil
Rosemary
Kosher Salt
Black Pepper
Potato Masher
Drainer/Slotted Spoon

Step 1: Preheat the oven/toaster oven to 450 degrees. After that, boil a pot of water – once it bubbles, add a handful of Kosher Salt and add the potatoes. Drain the potatoes once they are fork tender (about 10-15 mins).

Step 2: Slightly smash your potatoes with the potato masher

Step 3: Line your tray with foil (easy cleanup – yes!) and drizzle with olive oil. Make sure to spread it all around the foil so that it doesn’t burn.

Step 4: Add the potatoes and drizzle (slightly!) a little more oil on top of them for flavor and to make ’em crisp.

Step 5: Season your potatoes with a dash of Kosher salt, pepper and rosemary leaves

Step 6: Throw them in the oven for 15 mins and you’re ready to go! If making more, you can leave them in closer to 20-25 mins depending on how many you have.
