As promised, I decided to try out a new take on one of my favorite breakfasts: avocado toast! However, this time with an Italian twist.
1 avocado ( I used a mini one)
2 slices of bread (I used sourdough)
2 slices of fresh mozzarella
3 grape tomatoes
red pepper chili flakes
a drizzle of EVOO (extra virgin olive oil)
First, slice the avocado in half and add each half to a slice of bread. Afterward, mash the avocado with a fork and spread all over each slice.
Next, slice your mozzarella so there’s one for each slice of bread and place in each center. If you want more of the cheese flavor throughout, break up each mozzarella slice and sprinkle onto the bread instead.
Cut each grape tomato in half and top the mozzarella with them. Mine slid the cheese a little so I would turn the tomatoes upside down for eating (though pictured it looks pretty like this right? 😉).
Finish with a drizzle of olive oil along with the salt, pepper, and chili flakes and serve!
