I randomly had a craving for totchos (aka nachos but with tater tots) last week and I knew we had tater tots around so I just whipped up a batch and threw some favorites in!
Be warned, this is not for the health-conscious. But it’s so easy to make, how could you pass it up?
All you need is tater tots, less than half of a red onion (chopped), bleu cheese crumbles, and two strips of cooked, crispy, crushed bacon (I used turkey bacon), along with salt and pepper to season.
After preheating the oven to 425 degrees & lining the tray with parchment paper (easier to clean after), add the tots in a single layer as if you’re making one big casserole. Then cook the tots halfway through via the instructions that the package says, for example, mine was about 8 mins instead of 15/16 mins. Once it’s done, add the cheese and onions and cook for a few minutes more until the cheese is a bit toasted (little brown marks on them) and then season with salt and pepper to taste. I didn’t have either on hand but if have buffalo sauce and ranch, you can add them or BBQ sauce and grilled chicken for a southern twist.
Another item I suggest adding (which I just put for myself since not everyone likes them) is a sunny side up egg because, I mean, #yolkporn goals am I right? Top it with some red pepper flakes and a few drops of hot sauce and you have a winning savory brunch. Mmm!
